WHere is an easy interpretation of a cocktail featured on our latest menu. It's a batch pre-mixed which is loaded with the flavours associated with Christmas time, rendering it perfect for your holiday party. Reserve the remaining cordial you can use for morning drinks, desserts, or to mix more rounds of bikinis.
Bikini
Yields 10 servings
Ingredients for the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Drink (makes 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
To prepare the Syrup: Put the listed ingredients into a saucepan, bring to a gentle boil, mixing to dissolve. Next, turn off the burner and leave to cool fully. Decant into a sterilised bottle, cap it and store chilled, where it will keep for around a month.
For the Cocktail Base: Mix every liquid ingredients in a sizeable container, let it rest for an hour, then strain best through muslin, so it's fully clarified.
To serve: Add 85ml of your batch mix into your stirring glass filled with ice, and agitate lightly for about 60 seconds to cool it down. Strain to a cold coupe glass or equivalent, decorate with some cranberries and complete it by giving it a light spray of the essential oil over the top.
